Butchery & Curing


Our butchery and curing course will cover knife skills, basic butchery & curing. Using locally sourced meats. You’ll be shown how to prepare and marinade a piece of Lamb or Venison for your own home cured Jerky. We’ll show you how to make your own pancetta to finish curing at home. You’ll also be shown how to make a classic chorizo sausage from scratch.
